Sorry I've been so MIA this week, but I finished my Driver's Ed course Thursday afternoon, and went to the DMV yesterday morning. Aaaaaaand.... I got my permit! I had not wrong answers on my test, which I'm super pleased about! I think it was all the repetition we did in class - each day we had at least three tests. So now I just have to do six hours of behind the wheel lessons with an instructor, and fifty hours with my parents. Then I get my full license! Whooooo!
Anywho, today I want to share with you a little something I've been working on. I know a lot of food bloggers out there love bars.

(vegan, raw)

Ingredients:
1 cup soaked almonds
1.5 cups chopped dates
1-2 Tbsp cinnamon
3/4 cup oats
1/4 cup pumpkin seeds
Instructions:
1. Soak almonds in water overnight
2. Purée the almonds in a food processor/magic bullet. I used the magic bullet, and given the amount of almonds, it was rather difficult to do them all at once. I would advise blending small amounts individually. Transfer the blended almonds into a medium to large bowl.
3. Blend the dates, and add them to the almonds
4. Add in the cinnamon, oats, and the pumpkin seeds, and mix everything up.
5. Take generous samplings throughout.

8. Cover with saran wrap, and pop it in the fridge to firm up for a few hours. Afterwards, take it out and cut into rectangles or squars. I made 10 bars, but you can make fewer or more depending on how big you like your bars. Enjoy!
These bars are perfect for taking around with you for snacks, especially if you want something natural, healthy, and nourishing, but don't want to shell out a bunch of money for Laräbars or other natural fruit and nut bars.

ReplyDeleteYou should try making your own bars - they don't take that long and they taste great! (AND they're cheaper than store bought)
Those look delicious and congrats on the permit! I love anything with dates in them (that's what drew me to Larabars!)
